What's it called when you work at a riding stable in exchange for riding lessons?

I'd call it a working student, as you were working to ride... and I would say summary to the second part of your question. And I would also put what you did as a working student, for example grooming, cooling off, clipping, mucking out stalls, whatever you did in order to earn lessons.
